Many of you have no doubt noticed, on a trip to the rear of the restaurant, that we’ve recently moved our curing room to a more visible location. Now you can get a glimpse of all our various salumi, bacon, peperoni, etc., in all their temperature and humidity controlled glory. We always offer a few of these meats for sale, to-go, at the bottom of the menu. With the holidays just around the corner, what better way to say “I love you” than with hand-crafted smoked meats? Seriously, is there a better way?
Throughout the holiday season we will definitely have our house-cured bacon and blackstrap molasses-cured country ham (both smoked in-house over red oak) available for purchase, by the ounce. Other meats will pop up on the menu as they become fully cured, so keep an eye out, or just give us a call (or email) if you’re curious about something in particular.
